Zucchini Bread

3 eggs

2 c. sugar

1 c. vegetable oil

1 tsp. vanilla

2 c. coarsely grated zucchini

2 c. all-purpose flour

1 tsp. cinnamon

1 tsp. baking soda

¼ tsp. baking powder

1 tsp. salt

½ c. chopped walnuts or pecans (optional)


Preheat oven to 350ºF. Grease and flour two 8×4 loaf pans.

Using an electric mixer, beat eggs until frothy. Then, gradually add in the sugar, vegetable oil, and vanilla. Beat until thick and lemon-colored, then stir in the zucchini and nuts (if using).

Pour batter evenly into the two loaf pans. Bake for an hour, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes in the loaf pans, then remove and let cool completely on wire racks. While still warm, brush the tops of the loaves with melted butter.
