Sweet and Spicy Roasted Pumpkin Seeds

Seeds from 1 large pumpkin (about 2 cups)
1 tsp cumin
1 tsp garam masala
1/2 tsp paprika
1/2 tsp sea salt
1 Tbsp grape seed or olive oil
1 tsp cinnamon
1 tsp pumpkin pie spice blend
pinch of sea salt
1 Tbsp brown sugar
1 Tbsp melted butter

Rinse seeds and remove any excess pumpkin bits. Allow seeds to dry on a clean kitchen towel for 1-2 hours.

Heat oven to 300°F

For spiced seeds: Combine cumin, garam masala, paprika and salt in a bowl. Toss seeds in a small amount of olive oil and sprinkle with seasoning. Toss to coat.

For sweet seeds: Drizzle melted butter over seeds. Sprinkle with pumpkin pie spice blend and brown sugar, toss to coat.

Spread seeds evenly on separate baking sheets. Place in the oven and bake for 45-50 minutes. Seeds will be toasted and fragrant. Allow to cool slightly before serving.
