Rhubarb BBQ Sauce

3-4 Rhubarb stalks, diced
1 Onion, diced
2 Cloves garlic, minced
1/4 Cup ketchup
1/4 Cup light brown sugar
1 Tablespoon cider vinegar
1 Tablespoon Dijon mustard
2 Tablespoon olive oil
Salt and pepper to taste

To pot add olive oil, rhubarb, onion, and garlic, sauté on medium until tender.  Add ketchup, brown sugar, vinegar, mustard, salt and pepper.  Bring to simmer over medium heat and reduce to low for 5 minutes.  Serve with pork or chicken.
