5 lbs Russet or Red potatoes
3-4 Celery stalks, trimmed and diced
1 onion, diced
1 Bunch radishes (4-6) thin slices
Mix together in large bowl:
1 Cup mayonnaise
1/4 Cup mustard (Brown or Djion)
Salt and pepper to taste
Rinse potatoes and dice into bite size pieces. Place potatoes into pot and fill with cold water. Please pot over medium heat and bring to boil, check potatoes by piercing with a fork. Once tender, remove from heat and drain.
Mix potatoes and dressing together. Set aside. Dice celery and add to mixture. Slice radishes and place into bowl.
