Ingredients
For the Salad:
1 c microgreens
1 orange (peeled and cubed)
1/2 avocado (peeled and cubed)
1/2 c of shredded carrot, beet or daikon radish
1/4 cup walnuts (chopped)
For the Dressing:
1 Tbsp. olive oil
1 Tbsp. lemon juice
1 clove garlic (minced)
salt and pepper
Directions
Place microgreens in a bowl and top with remaining salad ingredients. Shake up dressing ingredients in a small jar or blend with an immersion blender. Poor dressing on salad and serve!
Yield: 1-2 servings
