Ingredients
1/4 c lime juice
1/4 c olive oil
1 tsp fish sauce
2 cloves garlic, chopped
1/4 c cilantro
1/2 tsp salt
1/2 tsp cayenne
1/4 tsp sugar
Lime wedges, to serve
1 head cabbage
Grapeseed or canola oil
Instructions
Heat grill. Blend lime juice, olive oil, fish sauce, garlic, cilantro, salt, cayenne, and sugar in a food processor or blender until ingredients are pulverized. Set aside.
Remove outer leaves from the cabbage and cut into eight even wedges. Do not remove inner core. Brush wedges with grapeseed or canola oil.
Place cabbage wedges on the grill and cover. Grill until edges of each layer are blackened and cabbage is softening, about 5-7 minutes. Flip the wedges over, cover, and grill for 5 to 7 more minutes. Remove cabbage when it begins to wilt.
Arrange cabbage wedges on plate. Pour dressing over top and serve immediately. Garnish with wedges of lime.
