Currant & Lime Sorbet

Refreshingly tart and sweet, easy to make, perfect for a hot summer afternoon.


1/2 c fresh squeezed lime juice

1 3/4 c rinsed, and stemmed fresh currants

3/4 c maple syrup

1 1/2 c water

2 tbsp vodka


Combine lime juice, currants, maple syrup and water in a blender.

Once smooth, pour into a fine mesh strainer to remove currant seeds. Add vodka. Taste test and determine if it is sweet enough for you. Keep in mind that it is a sorbet, so it is suppose to be tart. If it’s not, simply add more maple syrup.

Once sweetened to your liking, transfer to a large, seal-able plastic bag and refrigerate until stiff and cold. When ready to serve, take out of freezer and let thaw a bit, then use a hand blender to create a more desired sorbet texture. For the best consistency, thaw the mix and put into ice cream maker according to the manufacturer’s instructions.
