Chocolate Zucchini Bread

2 c. sugar

1 c. canola oil

3 large eggs

3 tsp. vanilla extract

2 ½ c. all-purpose flour

½ c. baking cocoa

1 tsp. salt

1 tsp. baking soda

1 tsp. ground cinnamon

¼ tsp. baking powder

2 c. shredded peeled zucchini

Directions

Preheat oven to 350ºF. Coat two 8×4 loaf pans with cooking spray.

Beat sugar, oil, eggs and vanilla in a large bowl until well blended. In a separate bowl, combine flour, cocoa, salt, baking soda, cinnamon, and baking powder. Gradually beat flour mixture into sugar mixture. Once blended, stir in shredded zucchini.

Pour batter evenly into the two loaf pans. Bake for 50-55 minutes, or until a toothpick poked into the center comes out clean. Cool for 10 minutes in the loaf pans, then remove and place onto wire cooling racks to cool completely.
