¾ pound celeriac (4 mini), peeled and cubed
1 pound carrots, sliced
2 eating apples, peeled and cubed
2 tbsp crème fraiche
½ tbsp butter
2 tbsp finely chopped parsley
Put the celeriac, carrots and apples in a large pan of water, bring to a boil and simmer for 20 minutes, or until tender. Drain, then tip back into the pan and mash roughly. Stir in the rest of the ingredients. Cover and keep warm until ready to serve.
