Baked Apples

1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup sugar
6 same-size Granny Smith apples
2 Tbsp butter, cut into 6 teaspoon-size pieces
1 cup apple juice
6 sprigs fresh mint

Preheat oven to 325°F.

In a small bowl, mix together cinnamon, nutmeg and sugar, set aside.

Remove Cores from apples by cutting through the top around the stem. Leave the bottoms intact. Remove skin from top 1/2 inch of apple around core opening. In each cavity, poor an even amount of cinnamon sugar mixture. Top the apples with a teaspoon of butter. Arange apples in a rimmed baking pan or casserole dish and poor apple juice around them. Cover with foil and bake for 45-60 mins. Remove apples from oven, garnish with mint and serve.
