Mini Apple Doughnut Skewers with Caramel Sauce

1/2 cup white sugar
3/4 tsp ground cinnamon
1/2 cup sour cream
1 Tbsp milk
1/2 tsp baking soda
1/2 tsp salt
1 cup all-purpose flour
1 medium sized granny smith apple – peeled, cored, and chopped
short wooden skewers

1/4 cup butter, melted
1/2 cup white sugar
1 tsp ground cinnamon

Heat oven to 375°F and grease 24 mini-muffin cups.

In a large bowl, combine 1/2 cup sugar and cinnamon. Poor in sour cream and milk followed by the baking soda, salt, and flower. Mix until just combined. Fold in the apple pieces. Place mixture into the mini muffin cups until they are about half full.

Place in oven and bake for 15 to 20 mins or until golden brown.

While muffins are baking, melt 1/4 cup of butter into a small bowl. In a separate small bowl, combine 1/2 cup sugar with cinnamon. When muffins have finished baking, carefully remove them from their cups and roll them in the melted butter followed by the cinnamon sugar. Set aside and alow to cool. Skewer 2-3 doughnuts on a stick and serve with caramel dipping sauce.

1 cup sugar
1/2 cup butter (1 stick)
1 1/4 cups heavy cream – warmed
salt to taste

Heat sugar in a heavy weight saucepan over medium heat until it begins to melt and brown. This will take approximately five minutes. Be sure to stir constantly so that sugar does not burn. Once the sugar has begun to brown, add butter to saucepan. Cook carefully, stirring frequently until you have a smooth caramel colored sauce. Cook slowly, patients is key. Once a smooth sauce has been achieved, remove pan from heat and add warm cream about 1/4 cup at a time, stirring until well combined. Salt to taste and enjoy!
