In season from July to September, summer squash are a very versatile vegetable. Their bright yellow outer skin makes them easy to spot in the market, and there are a ton of opportunities to use this popular product. Their skin is edible, so preparation is quick and easy-- just slice up and add to stir fries, fry up for use in sandwiches, tacos, or pasta dishes, or halve and roast for a fast dinner.
