These bright green vegetables are in season during June and July. The outer pod and the inside peas are all edible. They make great snacks when eaten raw with hummus or another dip, but are also wonderful additions to many stir-fries and make a great side dish when steamed. They can also be added raw to salads, and are even delicious in sandwiches! Just make sure not to overcook them by boiling or steaming-- they’ll lose a lot of their sweetness and crunch!
